Here is a little photo essay of how we press off red wines using gravity. Once the liquid fraction is drained, the skin, seeds, etc (known as "pomace" ) is raked into a picking bin and then dumped into the press with the rotator on the forklift. From there, it is pressed-off at sequentially higher pressure by the bladder inside the press. When it's done, we dump the dry pomace it goes back to the vineyard for compost. Another happy ending!
